Grill Method:
Direct grilling over high heat with the lid open.

- 2 New York Strip Steak
- Kosher Salt
- The Spice Coach® Smoky Blend
1 – Approximately 40 minutes before you are ready to grill your New York strip steaks, take them out of the fridge and rub salt.
2 – Leave them on the counter to room temperature.
3 – Preheat the grill on high for direct grilling.
4 – Clean your grill with a grill brush.
5 – Hold your hand about 2 inches above the grill and see if the temperature is right, you don’t want to be able to hold your hand over the grill for more than 5 seconds.
6 – Place the New York strip steaks on the grill with tongs.
7 – After about 2 minutes, use tongs to pick up the steaks, rotate 90 degrees and then place the steaks back on the grill for two more minutes, you are now ready to pick them up and flip them over.
8 – After another 2 minutes, rotate the New York strip steaks another 90 degrees and grill them for a final 2 minutes and they should be ready.
10 – Take the steaks off the grill and let them rest for at least 5 minutes before serving. At this time cover with the spice and let the juices from the meat combine with the spice. You can always stick them back on the grill for a few minutes if they aren’t done enough.

RAY'S TIPS:
NEVER cut into your steaks or pierce the steaks in any way. For doneness press the middle of the steak with your index finger, the firmer it feels, the more done it is.
Another way to check the doneness of your steak is by picking up the steak with tongs. For example: when you first pick up the raw steak with tongs to place on the grill, they are pretty limp. When you grill a steak, the meat gets firmer. So a medium grilled steak, should bend a little when picked up with tongs and will be firmer than when raw. The more rigid the steak, the more well done! This will take a little practice.
Serve your grilled New York strip steaks with some grilled vegetables and mixed spring vegetables (using The Spice Coach® Citrus Herb spice and some creamy mashed potatoes.)
