CAJUN SHRIMP WITH MANGO SALSA
TIME: Prep; 30 min – Cook; 30 sec to 1 min
YIELDS: 4 servings
    • 2 fresh mangoes, diced
    • 1/4 cup crushed pineapple
    • 1/4 red bell pepper, coarsely chopped
    • 1/4 green bell pepper, coarsely chopped
    • 1 jalapeno pepper, seeded and minced (optional)
    • 1 garlic clove, minced
    • 1/2 red onion, diced
    • 2 tablespoons fresh cilantro, chopped
    • 2 teaspoons fresh lime juice
    • 1 Tablespoon The Spice Coach gourmet cajun blend
    • 1/2 teaspoon red pepper flakes (optional)
    • Salt and pepper (to taste)
1 – Mix all ingredients in a bowl and chill in the refrigerator.

Cajun Shrimp
    • 1 pound large shrimp, shelled with tails on
    • 1/4 cup The Spice Coach gourmet cajun blend
    • 4 tablespoons unsalted butter or oil​​
2 – Add butter or oil and preheat a skillet over high heat.

3 – Place shrimp in a large bowl and mix with 1/4 cup The Spice Coach gourmet cajun blend

4 – When oil starts to smoke slightly, place a batch of shrimp in the hot skillet and cook each side for about 30 seconds to 1 minute, just until the meat turns opaque (cook in batches, do not overcrowd)
RAY'S TIPS:
I like to make a batch of mango salsa early on and store it in the fridge for use throughout the week. It goes great with a variety of dishes!

When preparing your shrimp, remember that it cooks EXTREMELY quickly.​

Be sure to keep an eye on it to prevent any burning!
